One of our most popular coffees has always been from Central Aceh, on the northern tip of the island of Sumatra. There, the Gayo people make their livelihoods growing spices, fruit and coffee. The Gayo highlands are a wonderful place to grow arabica coffee: lush, rainy, forested and soaring into the equatorial sky, these mountains produce some of the most distinctive coffees in the world.

It is no wonder Northern Sumatran coffees are famous and popular. The classic Achinese coffee has a deep earthy characteristic, with aromas reminiscent of the forest floor after a spring rain. This initial earthiness is followed by a heady mix of deep, dark chocolate tones, hints of clove, cinnamon and pepper, and an underlying velvety body that seems to envelop the palate.

Coffees in Sumatra are partially dried while still in their sweet pulp, before being husked and re-dried. This process lends well-crafted Sumatrans a unique appearance and flavor. Sumatra, once part of the Dutch colony collectively known as "Java," is one of the world’s classic coffee origins. Coffees were transplanted there by the Dutch, and soon the word "Java" became synonymous with coffee itself. One unique characteristic of Sumatran coffees is the process by which they are prepared for export. The coffees are partially dried while still in their sweet pulp, before being husked and re-dried. This process lends well-crafted Sumatrans a unique appearance and flavor. Since the coffee spends so much time drying, and since rains are so frequent in this part of Indonesia, the coffee takes on musky characteristics which can be overpowering at times. This is why it is so difficult to find a perfect Sumatran lot.

We have a solid and direct connection with the Gayo co-op, and each year we select a lot of coffee for decaffeinating. The all-natural, gentle Mountain Water process decaffeinates the coffee while maintaining all the character of this great Sumatran gem.
